I get Eden Kuzu whenever I can, because the company is known to be of extremely high quality. I use it all the time as a thickener that also has health benefits (in Japan they make a hot drink with kuzu for people suffering from colds). As a Chinese medicine practitioner I know that kuzu has other medicinal qualities, including releasing stiff muscles in the upper body, so I always prefer it over arrowroot if it is available. I'm grateful that IHerb stocks kuzu because where I live, in Israel, the only importer of kuzu stopped importing it, so now I order it regularly from IHerb. I use it to thicken sauces and also to make pudding-like desserts based on fruit juice.
The results of custard/pudding with the use of kuzu powder is definitely very different compared to the use other starches like arrowroot. Kuzu custard is more paste-like & is thicker in texture. Still experimenting with this ingredient & observing whether it aids digestion as suggested. The powder dissolves quickly in room temperature water without the need to grind the blocks into powder. Will purchase again.
Eden Kuzu Root Starch has been a staple in my pantry for 40 years. I cook with it almost every day, not only because it's so healing and soothing for digestion and is remarkably pH balancing, but for the many delicious ways I can use it for easily thickening sauces and gravies, puddings and soups. The price is affordable and I've found Eden to be the best quality organic kuzu. I recommend it for maintaining vibrant health!
